Ingredients
- 2 cups flour (300g)
- 1/3 cup fine sugar (60g)
- 2 tsp active dry yeast - OR - (2 1/2 tsp instant yeast)
- 1/2 tsp. salt
- 1 beaten egg
- 1/2 cup warm water
- 1 tbsp. melted leaf lard
- 8 tbsp. leaf lard reserved (not melted) (100g)
- Powdered sugar for dusting
Instructions
- In a large bowl combine flour, sugar, yeast and salt
- Add the warm water, melted lard, and beaten egg, mixing well
- Turn out onto lightly floured board and knead for 10 minutes until the dough is soft & elastic (or use bread machine (dough setting) & run for 10 min).
- Grease bowl add kneaded dough and cover with a cloth. Let rise for 2 hours until the dough doubles in volume.
- Poke down the dough and divide it into 4 equal parts, shape into balls.
- Lightly grease your worktop with melted lard and drop a ball of dough, using a rolling pin roll out the ball to long rectangle. The dough should be paper thin.
- Drop 2 tbsp of lard onto the rolled dough. Use a spatula to spread the lard over the entire top of the dough.
- Beginning on the long side, roll the dough over itself taking pieces of dough between your fingers and try to stretch gently as you roll until dough is thinner and thinner until it is completely rolled into a long string.
- Carefully lift the string and transfer to a cookie sheet covered with parchment paper or a silicone mat. Lay one end down and loosely wrap the rest around into twirled shape leaving room for the dough to rise.
- Repeat the process for the remaining three pieces of dough.
- Cover twirls with clean towel and allow to rise in warm place for 1 hour
- Preheat oven to 350ยบ
- Bake for about 15-20 minutes until medium golden brown. Cool on wire rack.
