Ingredients
- 2 ounces blanched almonds, about 1/3 cup
- 1/2 cup all-purpose flour
- 1/4 cup plus one tablespoon cold lard
- 1/4 cup sugar
- 1 egg yolk
- 1/2 teaspoon grated lemon peel
- 12 roasted almonds, unskinned
- 1 egg, lightly beaten.
Instructions
- Preheat oven to 350 degrees.
- In a small food processor, grind blanched almonds with two tablespoons flour.
- In a bowl, beat lard with sugar, egg yolk, grated lemon and ground almonds.
- Stir in remaining flour.
- On a floured board, roll dough to 1/4-inch thickness.
- Cut out cookie shapes with a two inch cutter. Transfer cookies to a lightly greased cookie sheet. Press a roasted almond into center of each cookie and brush surface with beaten egg.
- Bake 15 to 18 minutes, or until nicely browned.
- Yield: 12 cookies.
