Cold lard, cold milk, & even cold flour are the keys to keeping your pie crust light and flaky. Work quickly! Cut the lard into the flour just until you have small bits of lard. You want those small bits of lard to remain intact and un-melted until it goes into the oven. Once in the oven those small bits will melt leaving an empty space behind. These spaces create the flaky texture of the crust.
Ingredients
- 2 1/2 cups flour
- 1 cup Leaf Lard
- Dash of salt
- 1 Tbsp. vinegar
- 1/2 cup milk
- For Sweet Crust Add
- 1 1/2 Tbsp. sugar
Instructions
- Combine the flour and lard, mix with a pastry blender or two knives until small bits.
- Add salt and vinegar to milk and stir.
- Combine milk mixture with flour and lard mixture.
- Blend; shape into a ball wrap and chill for 2 hours.
- Roll out on a floured pastry board. Work quickly.
