Ingredients
- --FILLING--
- 1 lb ground beef
- 4 oz leftover steak
- 1 cup ham, chopped
- 1 med onion, chopped
- 1/2 cup white wine
- 1/2 cup beef broth
- 2 tbsp lard
- Salt and Pepper to taste
- --CRUST--
- 2 1/2 cups flour
- 1 cup Leaf Lard
- Dash of salt
- 1 Tbsp. vinegar
- 1/2 cup milk
Instructions
- Preheat Oven to 450º F
- --FILLING--
- Add 1 tbsp lard to large skillet and sauté onion until translucent
- Add ground beef and cook till done. Cool
- Add leftover steak/ pork and ham to food processor and pulse until well chopped and then add the hamburger and pulse till mixed.
- Add 1 tbsp of lard to skillet and then add meat mixture and cook over medium heat for 3 to 4 minutes to meld the flavors.
- Add enough beef broth and white wine to the meat mixture to make it moist.
- Add salt and pepper to taste.
- --CRUST--
- Combine the flour and lard, mix with a pastry blender or rub in by hand.
- Add salt and vinegar to milk and stir.
- Combine milk mixture with flour and lard mixture.
- Blend; shape into a ball wrap and chill for 2 hours.
- Divide in half for upper and lower crusts
- Roll out the bottom crust on a floured board.
- lightly dust bottom of pie pan with flour then arrange the bottom crust in pie pan. Poke with a fork 4 to 5 times and lightly dust with flour again.
- Roll out the top crust
- Add meat mixture to prepared bottom crust and cover with top crust adding a couple of slits to vent steam.
- Cover edges of crust with foil or use a crust protector.
- Bake about 45 minutes at 450º F.
- Remove foil and continue baking until the crust is brown.
- Serve hot. Applesauce is the perfect side for this pie.
- Trust me. You have to have applesauce with this incredibly delicious meat pie.
